Rose Gold Minnie Ears took the world by storm a few years ago, and they are still as cute as ever! The Rose Gold Minnie Ears inspired a Cupcake at Walt Disney World, and we wanted to have them at home. Make your own copycat version of the popular dessert at home with this tutorial.
Minnie Mouse has always been stylish. The Rose Gold Ears are certainly one of her best contributions to fashion. Now you can have your very own Rose Gold Minnie Ears Cupcakes!

These Rose Gold Minnie Ears Cupcakes are so adorable. They are a chocolate and vanilla marble cake with buttercream frosting with fondant accents. It is almost too cute to eat. But, not quite. They are no longer being sold at Walt Disney World Resort, so we created a recipe to make in your own home. Get ready to create some magic in the kitchen!

Marshmallow Fondant Recipe

Marshmallow Fondant Recipe for Your Rose Gold Minnie Ears Cupcakes:
Start the process by making marshmallow fondant. It is really simple. Don't be scared away by the process. Pour the entire bag of mini marshmallows into a large microwave safe bowl. Melt them in the microwave for 1 minute. Stir. Add another minute to the time. The marshmallows will be fluffy and melty.
Add 1/4 cup of water and 1 T vanilla and stir until the marshmallows are nice and smooth and melted. Then, begin adding the powdered sugar one cup at a time. Stir between each addition. As the fondant gets thicker, it gets harder to stir.
When you have incorporated about 2/3 of the bag of sugar, stop. You need to add the food coloring before it gets too thick. This part can make your fingers pretty pink, if you don't want to dye your skin, you can wear gloves.
We used almost equal parts of rose and brown food coloring. Add the dye a few drops at a time until the color is to your liking. Spread some powdered sugar onto the counter and knead the fondant with the food coloring into the sugar until the color is smooth throughout. Keep adding sugar and food coloring until you have incorporated the entire bag of powdered sugar and the fondant is rose gold. If your hands are getting sticky, rub butter on your fingers and palms to keep the marshmallows from sticking.
Roll the finished fondant into several layers of cling wrap and place it in the fridge. Next, you’ll need to make the cupcake part of your Rose Gold Minnie Ears Cupcakes.

Marble Cupcake Recipe

Marble Cupcakes Recipe for Your Rose Gold Minnie Ears Cupcakes:
Make the vanilla cake mix according to the directions on the box. You can throw in 1/2 cup of sour cream to your cake mixes to add some richness to the taste. Move the cake batter to a separate bowl and then make the chocolate cake mix according to the box directions.

Place the brown cupcake liners into the baking pan.
Prepare a plastic frosting bag with a large round tip. Scoop about 2 cups of vanilla batter into a plastic frosting bag and 2 cups of chocolate cake batter into a second plastic frosting bag. Hold them upright so the batter doesn't drizzle out of the hole.
This is a clean and easy way to make swirled cupcakes. Squeeze the batter into the cupcake liners until they are about 3/4 cups full.
You will have to refill the batter bags a few times during the filling process. This should make about 42 cupcakes. Perfect for a party! Bake them according to the box directions and let them cool.

Buttercream Cream Cheese Frosting Recipe

Buttercream Cream Cheese Frosting Recipe for Your Rose Gold Minnie Ears Cupcakes:
The Rose Gold Cupcakes from Walt Disney World were made with a buttercream frosting, but this recipe holds the shape of your piped frosting on the cupcake so much better. Plus it’s delicious!

Whip the butter and cream cheese together until they are nice and smooth. Add 1 T vanilla and then incorporate the powdered sugar a little bit at a time. The frosting should be firm.

Separate the frosting into two parts. You will need white and rose gold.

Add the food coloring to one of the frosting parts. Start with a small amount of rose and brown coloring. Keep adding the colors until you have the desired color result.
Work with the rose gold frosting first. Fit a bag with a petal frosting tip. Make petals around the outside edge of the cake top. Making the petals is very simple. Just rotate the tip in a circle as you press the frosting out.
Repeat this step so you have two layers of pretty ruffles. Start the second layer just inside of the first towards the center of the Rose Gold Minnie Ears Cupcake.

Then, fit a frosting bag with a large star decorating tip. Fill it with the white frosting. Add a swirl of frosting onto the center of the cupcake.
Give the frosting some gold bling with round candy gold pearls. Place one gold pearl on each frosting petal.

Assembling Your Rose Gold Minnie Ear Cupcakes

Now, comes the fun part of the Rose Gold Minnie Ears Cupcakes! Working with fondant.

Remove the fondant from the fridge. Wipe a layer of butter on your work surface. Roll the fondant out with a rolling pin until it is about 1/6 inches thick. You can use half of the fondant at a time, so it is easier to work with.
Cut out Minnie Mouse ear circles. You will need two circles per cupcake. I used a small medicine measuring cup that was a good size.
You can add the circles now or wait until you have crafted all of the bows. Cut long 1-inch strips from the fondant with a pizza cutter.
Cut the strips into sections that are 4 inches long. Fold the strip, so the ends bend towards the center. Keep space between the two layers to maintain the "bow" look.
Cut a strip of fondant that is 3/4 inches thick and 2 inches long. Wrap it around the center of the bow, so the ends meet in the back. Press the ends into place so they stick.
Use a knife to mark indents into the bow to create ribbon-like creases.
Place the ears and bow on top of the white frosting. If your fondant is kind of droopy, you can add a small squirt of frosting behind the ears to keep them nice and vertical.
We added a brush of yellow sugar dust to the bow to give it a gold glitter finish. Minnie likes to sparkle and the Rose Gold Minnie Ears Cupcakes need to reflect that!
The marble cake makes the Rose Gold Minnie Ears Cupcakes really fancy. Each bite is so elegant.
